    Myron Mixon and his son Michael invited us to their home in Unadilla, Georgia to show us their secrets to making some damn good ribs—from prepping to smoking, and the Cabo Tequila-infused glaze that takes these thick cut ribs from mouth-watering to award-worthy. Learn more about Cabo Wabo: Http://twitter.com/cabowabotequila http://faceboook.com/cabowabo http://instagram.com/cabotequila Learn more about the Mixons: http://www.jacksoldsouth.com http://twitter.com/lord_of_q http://instagram.com/lord_of_q Cabo Glazed Ribs By Myron Mixon WHAT IT NEEDS RIBS: 2 racks of Baby Back or St. Louis pork ribs 1/4 cup Cabo Blanco Tequila 1/4 cup BBQ vinegar sauce 8 oz. pineapple juice Jack’s Old South Rubba Dub Meat Rub (or your favorite BBQ rub) 1 jar of apricot preserves Olive oil SPRITZ: 24 oz. apple juice 1 tbsp. light brown sugar 1 tsp. hickory salt HOW IT'S MADE 1. Heat smoker to 275°F. 2. Remove membrane from back of ribs and trim excess fat. Rub down with olive oil. Apply Jack’s Old South rub. Press in—don't rub. 3. Place ribs in smoker and cook for 1 hour. 4. While ribs are cooking, make spritz. After 1 hour of cooking, spritz the ribs, covering the bottoms and tops of ribs, every 15 minutes for 1 hour. 5. After 2 hours of smoking, pour 2 cups of apple juice into a deep pan. Remove ribs from smoker and place in pan, tops down. Put pan on smoker and cook for another hour. 6. While ribs are cooking, make glaze: in a blender, combine BBQ vinegar sauce, pineapple juice, Cabo Tequila, and apricot preserves. Blend until smooth. Pour into small pot and heat over medium high heat until warm, and then reduce heat to low. 7. Remove pan from smoker and brush glaze over all ribs. Return pan to smoker and cook for 10 minutes. Remove and serve.

Smoking wood is Kiawe (Hawaiian Mesquite). Smoking time is 3 hours from raw state. Temperature average is 200 degrees F. Note, this is the very FIRST TIME I've ever smoked Tako. Smoked lots of pork in my lifetime "Big Island Smoke Meat style", using this method, but never Tako, until now. Next time I'll try the more standard beer boiling precooking and tenderizing method. Smoking the Tako from raw state this way, it required time in the smoker too long, turning out too smokey. Still ono, but a little overpowering with the Kiawe. I've learned Tako meat absorbs flavor like a "sponge" compared to other meats.     I used the reverse Sear Method. Seasoned Steak and put in frig for two hours set pellet smoker to smoke put steak in smoker on top rack to heat to an internal temp of 115 took out steak and gave a light coating of olive oil turned smoker up to High heat after griddle plate was blazing hot, seared steak for 1 minute gave a quarter turn, and seared for 1 minute flipped steak and repeated sear. I found that using the Lodge cast iron griddle plate, directly over top of the fire pot worked best for me. \m/ \m/

Mix marinade ingredients in bowl, pour over ribs, cover and refrigerate for at least 4 hours. Preheat smoker to 275F. Pat dry ribs. Oil and rub. Put the ribs in smoker for 2 hours. Take 'em out and and wrap in foil. Cook for 2 more hours or until melted. Unwrap, drizzle butter, cut and serve.     My update on a plan to try and get more true wood and charcoal flavor, into the cooks of the Pellet Grill. For this idea to work….. it needed to have a continuos source of oxygen to stoke the burning charcoal and wood. When I was done filming, I turned off the pump,... the charcoal and wood quit producing that rolling smoke, and choked itself out.

Heat smoker to 300°F. 2. Trim any excess fat and membrane from the pork tenderloin. Using a sharp knife with a long, straight blade, insert the knife through the center of the tenderloin. Do not cut into the side of the tenderloin, just insert the knife blade into the center and then remove. Push turkey baster through the cut, enlarging the opening, then remove baster. 3. Trim smoked sausage link to the exact length of the tenderloin. 4. Stuff sausage into the opening. Wrap the tenderloin with the bacon, using toothpicks to hold the bacon onto the tenderloin. 5. Apply Jack’s Old South rub thoroughly, coating the outside of the tenderloin. Place tenderloin in a medium-sized aluminum pan, then place in smoker. 6. Cook for about 1 hour or until the internal temperature of the meat reaches 150°F. 7. While the meat is cooking, make the glaze: combine white grape juice, sugar, Cabo Tequila and a dash of hot sauce in a small pot over medium heat. Stir thoroughly to combine and cook until the sauce thins out. Reduce heat to low to keep warm. 8. During the last 15 minutes of cooking time, apply half of the glaze to the meat with a brush. 9. Remove pan from the smoker. Allow meat to sit, loosely covered, for 10 minutes. Then cut meat into slices, about 1/4 to 1/2 inch thick. Serve with remaining sauce.
